Karen Archambault has been making chocolate delicacies for family and friends ever since she took a chocolate making class in South Carolina in 1982. Now, twenty years later, she's turned her hobby into a new career. Karen has her own shop and makes chocolate creations for weddings, get well or birthday baskets, new baby baskets, housewarming baskets, Valentine's Day, and Easter Chocolate treats. As any chocolate lover can tell you, any occasion is a opportunity for chocolate.

Karen's chocolate contains no preservatives. She also carries a sugar-free chocolate for diabetes or those on a diet. Some of her more popular chocolate items include turtles made with caramels, cashews and macadamia nuts and orange peels or dried apricots dipped in chocolate. Another favorite is a granny smith or Fuji apple wrapped in caramel, dipped in chocolate, and rolled in crushed pecans or nut of your choice.

Karen also does Groom's tables for weddings. She makes a dark chocolate wedding cake topper. Another popular item is white chocolate baskets filled with chocolate covered strawberries in a man's tuxedo design.

Any items can be made with white chocolate, dark chocolate or milk chocolate. Specialty baskets are made to suit any theme. Karen says that no order is too small or too large. Karen has made a chocolate computer for one basket and filled with other goodies.

She also does chocolate houses and "for sale/sold" signs for realtors. She makes chocolate money, too! I got my friend a basket of six chocolate teddy bears on sucker sticks. The only problem was that she thought they were too cute to eat. The "Get Well" Baskets are delivered in a black medical bag.

Some chocolate hints from Karen: Melt slowly on low heat or in microwave. Don't store chocolate in the refrigerator. Keep at room temperature. Karen uses Guittare chocolate and Merkens chocolate for her shop. Quality chocolate is the most important ingredient for chocolate specialty items.

Karen sells the molds and the chocolate at her shop for those who want to make their own chocolate specialties. Karen plans on teaching chocolate-making classes. You can call the shop to get on the class list.

The Chocolate Gallery is located at 8415-C Whitesburg Drive in Huntsville, right across from Gibson's Barbeque. The shop is located in a strip mall and is opened Monday through Friday from 9:30 to 5:30 pm; Saturday 10:00 to 5:00 pm and closed Sunday. You can call the Chocolate Gallery at 256-882-3373.
