Cooking with Cathey Carney

Cathey Carney has just delivered the second in a series of cookbooks from Old Huntsville magazine to local bookstores.  This 324 page book of recipes and timeless tips was two years in the making.  Carney's latest cookbook features recipes from the readers of Old Huntsville magazine, her personal favorites, and recipes that she has researched and found in old, and a lot of times, out-of-print recipe books.  Seventy-five percent of the recipes have been kitchen-tested by Cathey.

Volume Two includes recipes that are old standards--like Awesome Southern Pancakes,  Wonderful Apple Dumplings, Turkey & Stuffing by Owens, Apple Crumb Pie, and Real Southern Fried Chicken--plus some different twists to common foods--like Sweet Potato Cobbler, Latte Brownies, Spicy Chicken Gravy, and Bubba's Twice-Cooked Potato Casserole.  There are hundreds of treasures in this book and hours of kitchen-testing for the cook in your house.

A unique feature of Cathey's cookbooks is the  "Timeless Tips"  spread throughout the pages. The book comes with a caveat: "The health remedies included in this book are meant for amusement only and should never take the place of sound medical advice from your doctor."  The tips are entertaining, but there is a lot of wisdom found within the book, too.  Carney says, "These remedies have lasted through the years and stood the test of time.  Of course, you have to use common sense when it comes to herbs or kerosene remedies."  You'll find wisdom  and tips on Losing Weight, Fingernail Lore, Old Waiter's Tricks, Eating at Parties,  and Nightmare Remedies.  A fun addition for those, like me, who enjoy just reading a cookbook!

Carney's first cookbook came out in 1995 and sold out in 2 months.  It has not been reprinted.  Cathey says that they will probably have a second printing of it in a couple years.  In the meantime, she's already at work on a third cookbook, which should be out sometime next year.

Cathey's own favorite recipe is "Grandma's Lace Cookies," which was published in her first cookbook.  "The cookies are made from simple, basic ingredients and come out crispy and sweet.  They're so thin you can see through them."   If you missed out on Cathey's first cookbook because it sold so fast, you can snap up a copy of The Old Huntsville Book of Recipes and Timeless Tips--Volume 2 at Shaver's Bookstore on Whitesburg Drive or Books-A-Million or by calling 256-534-0502.

 Ladies......start your ovens!

Cathie takes time out to go to Eunice's Country Kitchen and autograph a copy of her new cookbook for local favorite, Aunt Eunice.
