In 1977, Grant and Kathy bought the old bicycle shop that was only a few blocks from the Square and renovated it into the popular local coffee shop.  A few years later, they bought the Jabez Burns No. 7 Roaster which was build in 1929 in New York by the Burns Company.  Grant still uses it to roast the coffee as it is needed.  Anything over a week old, he considers too old and throws out.  All coffees are roasted and flavored on the premises.

Coffee roasting is an art as well as a science and requires intense concentration to make sure each batch is roasted to perfect color.  Each variety of coffee has its ideal roasting time and temperature.  It takes years of experience to become a roastmaster.

The Roaster holds about 66 pounds or 1/2 bag of green coffee beans.  The green beans are similar in many ways to ordinary pinto or other edible beans.  Dry, dense and grassy in smell, they bear little resemblance to what we think of as coffee.
