02/19/05:  Growing up in the north has always influenced my taste in food.  My favorite food had always been Italian until I moved to the South.  Moving to the south changed my taste in food, and Mexican is my new favorite.  My entire family loves Mexican food, so we go out to eat at a Mexican restaurant called Little Rosie's Taqueria at least twice a week.  It is located on Whitesburg Drive in the Publix shopping center.  It is a fairly new restaurant in Huntsville Alabama.  I love this restaurant mostly for the Spanish atmosphere, fast and friendly service, and great Mexican food.
     As people enter the parking lot of Little Rosie's Taqueria they get the feeling of a small, well advertised Mexican town.  The building has a ramshackle, fiesta look to it.  The Spanish music puts me in to the mood for Mexican food every time I enter for breakfast, lunch, or dinner.  The bold paintings, tiled walls, and rustic appliances really set the stage for a great Mexican meal.  The restaurant has a few Spanish workers who go around cleaning and refilling the salsa bowls and ice machine.  You can hear the upbeat and distinctive Spanish music playing in the background while feasting on beef and chicken enchiladas.  There are two small water fountains with beautiful turquoise borders to accent the sparkling water dropping out of rundown looking pipes.  The windows appear to look old, but they are stunning due to the array of different colors.  The red, green, blue, orange, and purple window panes remind me of stained glass windows in a beautiful church.  On warm days they push open the windows, and the low hanging ceilings fans give a nice flowing breeze in to the patio area.  Large brown scripted bowls with beautifully carved tomatoes, green peppers, and avocadoes sit on the countertops dividing the tropical plants.  The Christmas lights strung inside and out of the building attract the ceiling and its Spanish signs, and they are truly exciting for small children to gaze upon.  The Spanish atmosphere really gets my taste buds ready for a fantastic Mexican meal.   
     The first time my family and I went to Little Rosie's Taqueria it was extremely crowded.  Although the line to order was backed up out through the wooden doors, out to the small parking lot, my family and I was able to order because of the quick and efficient service.  As customers order, the cashiers get chips and white or yellow queso (cheese dip) to put on a tray for drinks, a receipt, and a buzzer, which allows them to know when to pick up his or her food at the pick-up counter.  The red light-up buzzer enables the cooks to prepare the food quickly and the consumer can pick his or her order up along with a few cups of spicy salsa in an organized fashion.  Ice, drinks, salsa, napkins, and plastic silverware are able to be picked up by the customer whenever needed.  The well organized, immediate service deserves a great deal of gratitude.       
     How should I even begin to talk about Little Rosie's renowned food?!  For starters, the breakfast, lunch, and dinner are desirable.  For breakfast, the menu describes many combinations of burritos such as the mouth watering sausage or bacon, egg, and cheese special.  During the crowded hours of lunch and dinner the menu calls for something more traditional for example: the steaming fajitas, bean and cheese burritos, melted cheese enchiladas, and chicken quesadillas.  The choice of beans and rice on the side complete the meal.  After talking about all this Mexican food, my taste buds are screaming out for a bite of a chicken fajita wrap.
          I position the atmosphere, service, and food at Little Rosie's at the top of my list.  The Mexican theme sincerely sets the stage for a Mexican feast.  A restaurant is not a restaurant without great service and Little Rosie's has that down pat.  The food is certainly, by far, the best Mexican food I have ever tasted than at any other Mexican restaurant.  Everyone should get the chance to indulge themselves to Little Rosie's Taqueria
