Simple Tipsy Cake

You can make a homemade version of the Jack Daniel "Tipsy Cake" by using a bought or homemade sponge cake, sliced, soaked in whiskey or apple brandy and layered with an easy custard filling.

Prep Time: 30 minutes

Ingredients:

  • 4 egg yolks
  • 4 T. sugar
  • ½ tsp. salt
  • 2 C. milk, scalded
  • 1 tsp. vanilla extract
  • ½ tsp. almond extract
  • 1 - 8 or 9-inch sponge cake sliced into 2 layers
  • 1 C. whiskey or apple brandy
  • 1 ½ C. almonds, split and toasted

Preparation:

Blend the egg yolks, sugar and salt in the top of a double-boiler. Add the milk, stirring constantly, and cook over simmering water, until mixture coats a spoon and makes a custard. Flavor with the vanilla and almond extracts. Chill.

Place one layer of cake on a serving dish. Pour half the whiskey over it and let stand until absorbed. Top with half the custard. Cover with second layer of cake, soak with the remaining whiskey, top with remaining custard. Garnish generously with toasted almonds.
